Today’s new action: Baking our first-ever vegan plant-based quiche
My husband and I have been together night and day throughout the pandemic. Day in, day out. But life is short, and so very very precious.
So tonight we celebrated that we were fortunate enough to be having dinner together again. I ironed my grandmother’s damask tablecloth, and the linen serviettes. I cleaned the candlesticks and put in fresh beeswax candles. I picked hydrangeas and got out the silver cutlery. And I opened a bottle of champagne.
We also celebrated how much we still love to try new things, how much fun we’re having participating in A Year In a Day, and how committed we both are to protecting this precious life for the young people coming after us.
For my new act to help restore planetary health tonight, I made our first ever vegan, plant-based quiche. I was delighted at how lovely and crunchy the pastry was. It was made from flour, salt and coconut oil. And we were both impressed at how Nutritional Yeast tastes remarkably like parmesan. The filling of the quiche was thickened with chickpea flour, and all our greens for tonight’s dinner were #BlackheathGrown.
It’s been a very wet season but it’s meant we’ve had fabulous crops of silverbeet, chives, and spring onions. Perfect for our quiche. Tonight we also tried our first broccoli, kale, red mustard and red cabbage microgreens on a bed of lettuce with two tiny tomatoes we grew in the greenhouse. I used this recipe for the quiche. (NB. I cooked it for an hour not 40 minutes).
Zoonotic diseases and how to break the chain of transmission
This pandemic has been described as one of the worst zoonotic diseases we’ve encountered in our lifetime. Zoonotic diseases are those transmitted between animals and people and are on the rise because of climate change and an increasing demand for meat. Environmental and human health are intricately connected and eating less meat is one way to protect future generations from climate change and more zoonotic diseases.
We had a ball tonight and experimenting with a plant-based quiche was part of it.
