Cauliflower soup/mush

Ingredients
  

  • 1 cauliflower
  • 1 onion, finely chopped
  • 2 tsps veggie stock powder in 2 cups water
  • 1 cup milk or alternative
  • ½ cup cream or alternative
  • salt and pepper
  • 4 tbsp olive oil

Instructions
 

  • Coat the cauliflower with oil and bake at 180C for 40 minutes; then 140C for another 10.
  • Fry onion, add to cauliflower with all other ingredients and blend
    Serve with crusty rye bread
