Raw Savoury Dishes – Lunch and Dinner

In this workshop, Vicki will show you how to make 6 different savoury dishes, which can be served for either lunch or dinner. During the workshop, you will be able to taste the different aspects as the dishes are created so that you have an understanding of the texture and flavour required for the end product.

You will learn:

– what raw food is and the health benefits;

– the 25 different raw food groups – yes more than lettuce, tomato and cucumber!

– techniques and basic recipes like ‘cooked mushrooms’, soup stock, making ‘al dente’ pasta and soaking times for nuts and seeds;

– Satay Vegetables;

– Summer Soup;

– Zucchini Pasta with Basil, Tomatoes and Rocket Salsa;

– Vegan ‘Bolognese’ Sauce; and

– Thai Soup.

All recipes are wheat, gluten, dairy, egg, soy and refined sugar-free. Suitable for vegans.
